Ingredients
- 350 gbeef tenderloin
- 100 grocket
- 2 tbsphorseradish sauce
- 3 tbspGreek yoghurt
- 1 tbspcapers
- 20 gParmesan shavings
- 100 gcherry tomatoes
- 1 tbsplemon juice
- 1 tbspolive oil
- 0.5 tspDijon mustard
- 1black pepper
Ingredients
- 350 g beef tenderloin
- 100 g rocket
- 2 tbsp horseradish sauce
- 3 tbsp Greek yoghurt
- 1 tbsp capers
- 20 g Parmesan shavings
- 100 g cherry tomatoes
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 0.5 tsp Dijon mustard
- to taste black pepper
Instructions
- Bring beef to room temperature, season generously.
- Sear in very hot pan 2.5 minutes each side for medium-rare. Rest 5 minutes.
- Mix horseradish, yoghurt, lemon and mustard for dressing.
- Arrange rocket on plates with tomatoes.
- Slice beef thin, lay over salad.
- Drizzle dressing, scatter capers and Parmesan.
