- 1 gpumpkin or butternut squash, peeled and cubed
- 1 tspmustard seeds
- 1 tspfennel seeds
- 1 tspcumin seeds
- 1 wholedried red chili
- 1 tspturmeric
- 1 tspcoriander powder
- 1 tspjaggery (gur) or sugar
- 1 tbspoil
- 1 tspsalt
Ingredients
- 500 g pumpkin or butternut squash, peeled and cubed
- 0.5 tsp mustard seeds
- 0.5 tsp fennel seeds
- 0.5 tsp cumin seeds
- 1 whole dried red chili
- 0.5 tsp turmeric
- 0.5 tsp coriander powder
- 1 tsp jaggery (gur) or sugar
- 2 tbsp oil
- 0.75 tsp salt
Instructions
- Heat oil in a pan; add mustard, fennel, cumin seeds, and dried chili; let sizzle.
- Add pumpkin cubes; toss to coat in tempering.
- Add turmeric, coriander powder, salt, and a splash of water; cover and cook 12 minutes.
- Remove lid; cook 3 more minutes until edges caramelize slightly.
- Add jaggery; toss and cook 2 minutes until glazed.
- Serve warm with puri, roti, or dal-rice.
