Ingredients

  • 600 gwhole squid tubes cleaned
  • 200 gsmall shrimp peeled
  • 100 gonion finely diced
  • 200 gtomato diced
  • 15 gfresh coriander
  • 120 mldry white wine
  • 300 gcrushed tomatoes
  • 30 mlolive oil
  • 40 gbreadcrumbs
  • 3 wholegarlic cloves minced

Instructions

  1. Preheat oven to 180 °C.
  2. Sauté onion and garlic in half the oil; add shrimp and cook 2 minutes.
  3. Stir in tomato, coriander, and breadcrumbs; season and cool.
  4. Stuff each squid tube two-thirds full with the shrimp mixture; seal with a toothpick.
  5. Brown stuffed squid in remaining oil in an oven-proof pan.
  6. Add white wine and crushed tomatoes; bring to a simmer.
  7. Transfer to oven; bake 25 minutes until squid is tender. Serve with white rice.
