Ingredients

  • 3 lb pork shoulder
  • 0.5 cup BBQ sauce
  • 3 tbsp apple cider vinegar
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tbsp brown sugar
  • 3 cup coleslaw mix
  • 0.25 cup Greek yogurt
  • 0.5 cup dill pickles, sliced
  • 1.5 tsp salt

Instructions

  1. Rub pork with smoked paprika, garlic powder, brown sugar, and salt.
  2. Slow cook on LOW 8 hours (or HIGH 4 hours) until tender.
  3. Shred pork and mix with BBQ sauce and apple cider vinegar.
  4. Make quick coleslaw: toss coleslaw mix with Greek yogurt, a pinch of salt, and pepper.
  5. Layer into 8 mason jars: pulled pork on bottom, coleslaw in middle, pickles on top.
  6. Seal and refrigerate up to 5 days. Eat cold or microwave pork layer separately.
