Ingredients

  • 600 graw tiger prawns, peeled
  • 400 gcooked jasmine rice
  • 1 wholefresh mango, diced
  • 1 wholeavocado, diced
  • 100 gcucumber, sliced
  • 1 wholefresh red chilli, thinly sliced
  • 30 mllime juice
  • 15 mlfish sauce
  • 1 clovegarlic clove, minced
  • 15 gfresh coriander, to garnish
  • 10 mlolive oil

Instructions

  1. Whisk lime juice, fish sauce, garlic, and chilli for dressing.
  2. Toss prawns with a little olive oil and salt. Grill on a hot BBQ or grill pan 2–3 min per side until pink and cooked.
  3. Divide rice among bowls. Top with mango, avocado, and cucumber.
  4. Arrange prawns on top. Drizzle with dressing and garnish with fresh coriander.
