Ingredients
- 600 gchicken thighs, boneless skinless
- 400 gcanned chickpeas, drained
- 1 wholeonion, diced
- 1 wholered bell pepper, diced
- 400 gcrushed tomatoes
- 300 mlchicken stock
- 2 tspsmoked paprika
- 1 tspcumin
- 10 mlolive oil
- 1 to tastesalt and pepper
Instructions
- Heat oil in a large pot. Brown chicken thighs 3 min per side; set aside.
- Sautรฉ onion and pepper until soft. Add paprika and cumin; stir 1 minute.
- Add crushed tomatoes, stock, and chickpeas. Return chicken to pot.
- Simmer covered 30 minutes until chicken is tender.
- Shred chicken with two forks. Adjust seasoning and serve.
