Ingredients
- 500 gcooked chicken breast, shredded
- 400 gcanned hearts of palm, drained and sliced
- 200 gcherry tomatoes, halved
- 150 gcanned corn, drained
- 0.5 wholered onion, thinly sliced
- 20 gfresh flat-leaf parsley, chopped
- 30 mllemon juice
- 20 mlolive oil
- 10 gDijon mustard
- 1 to tastesalt and black pepper
Instructions
- Whisk lemon juice, olive oil, Dijon mustard, salt, and pepper for vinaigrette.
- Combine hearts of palm, cherry tomatoes, corn, and red onion in a large bowl.
- Add shredded chicken and toss with two-thirds of the vinaigrette.
- Garnish with parsley and drizzle remaining dressing. Serve immediately or chill.
