Ingredients
- 1000 gchicken pieces, bone-in
- 2 wholeonions, finely sliced
- 3 wholetomatoes, chopped
- 30 ggarlic and ginger paste
- 10 gblack peppercorns
- 6 wholedried red chillies
- 10 gcoriander seeds
- 5 gcumin seeds
- 5 gfennel seeds
- 15 wholecurry leaves
- 100 mlcoconut milk (light)
- 20 mloil
- 1 to tastesalt
Instructions
- Dry roast peppercorns, red chillies, coriander, cumin, and fennel seeds until fragrant, ~2 min. Cool and grind to a coarse powder.
- Heat oil; fry curry leaves and onions until deeply golden, ~10 min.
- Add garlic-ginger paste; cook 2 min. Add tomatoes; cook until oil separates, ~8 min.
- Add ground spice powder and chicken pieces; coat well. Cook on high 3 min.
- Add coconut milk and 100 ml water; cover and cook 20 min until chicken is tender.
- Simmer uncovered 5 min to thicken. Serve with rice or parotta.
