Ingredients
- 400 glean beef, cubed
- 300 glean pork, cubed
- 200 glamb shoulder, cubed
- 400 gpotatoes, peeled and cubed
- 200 gcarrots, sliced
- 150 gceleriac (or celery), cubed
- 2 wholeonions, diced
- 1 wholeleek, sliced
- 1000 mlbeef or vegetable stock (low sodium)
- 20 gfresh parsley, chopped
- 5 gmarjoram (fresh or dried)
- 15 mloil
- 1 to tastesalt and black pepper
Instructions
- Season all meat. Heat oil in a large heavy pot; brown meats in batches over high heat, ~3 min per batch. Remove.
- Cook onion in the same pot 3 min. Add all vegetables, meat, marjoram, and stock.
- Bring to boil; skim any foam. Reduce heat; cover and simmer 45 min until meat is tender.
- Season generously; stir in parsley. Serve in deep bowls with rye bread.
