Ingredients

  • 200 gchickpea flour (farine de pois chiche)
  • 400 mlwater
  • 30 mlolive oil
  • 200 gsmoked salmon
  • 150 glow-fat Greek yogurt
  • 20 gcapers
  • 10 gfresh dill, chopped
  • 15 mllemon juice
  • 1 to tastesalt and black pepper
  • 3 gfresh rosemary (optional)

Instructions

  1. Whisk chickpea flour, water, half the olive oil, salt, pepper, and rosemary into a smooth batter. Rest 30 min.
  2. Preheat grill/broiler to high. Brush a cast-iron skillet with remaining oil; heat on hob until very hot.
  3. Pour batter into pan (about 1 cm thick). Grill under broiler 8–10 min until edges are set and top is lightly blistered. Slice.
  4. Mix Greek yogurt with lemon juice, dill, and salt for sauce.
  5. Top socca slices with smoked salmon, a spoonful of yogurt sauce, and capers.
