Ingredients
- 300 gpasta dough
- 250 gricotta
- 200 gfrozen spinach thawed squeezed
- 60 ggrated parmesan
- 1 wholeegg
- 400 mltomato passata
- 15 mlolive oil
Instructions
- Mix ricotta, spinach, parmesan, egg, salt; set filling aside.
- Roll dough thin; cut circles 8 cm diameter.
- Fill and seal into sorrentinos; rest on floured tray.
- Boil in salted water 3–4 min.
- Simmer passata with olive oil; toss pasta.
- Serve with extra parmesan.
