Ingredients
- 900 gground turkey (93% lean)
- 2 wholeegg whites
- 60 goat flour (or quick oats, blended)
- 1 wholeonion, finely grated
- 1 tspgarlic powder
- 15 mlWorcestershire sauce
- 60 gtomato paste
- 15 mlapple cider vinegar
- 800 gsweet potatoes, peeled and cubed
- 60 mllow-fat milk
- 1 to tastesalt and black pepper
Instructions
- Preheat oven to 190ยฐC / 375ยฐF. Line a loaf pan with parchment.
- Mix turkey, egg whites, oat flour, grated onion, garlic powder, Worcestershire, 40 g tomato paste, salt, and pepper until combined. Do not overwork.
- Press mixture into loaf pan. Mix remaining 20 g tomato paste with apple cider vinegar for glaze; brush over top.
- Bake 50โ55 min until internal temperature reaches 74ยฐC / 165ยฐF. Rest 10 min before slicing.
- Meanwhile boil sweet potatoes until tender, ~15 min. Drain and mash with milk, salt, and pepper.
- Slice meatloaf and serve with sweet potato mash.
